Pork Flatbread with salad and McCain Air Fryer Quick & Crispy Deep Ridge Crinkle Chips

Ingredients

2 pork loin steaks
2 tbsp olive oil
1 ½ tsp smoked paprika
1 ½ tsp ground cumin
1 ½ tsp dried oregano
1 lemon, zested and ½ juiced
Salt and pepper
2 shop-bought flatbreads
1 tbsp mayonnaise
1 tsp garlic puree, ½ for the marinade and ½ for the mayonnaise
Small bunch chives
2 tbsp pickled red cabbage
½ Iceberg lettuce
½ cucumber
2 spring onions
6 cherry tomatoes
½ red onion
100g feta cheese
250g McCain Air Fryer Quick & Crispy Deep Ridge Crinkle Chips

How to cook

Step 1
Preheat your air fryer to 200ºc/400ºf. Mix together the ½ tsp garlic puree, dried herbs, lemon zest and juice and spices with a big pinch of salt and plenty of freshly ground black pepper. Pour in the olive oil and mix to a paste.

Step 2
Use a sharp knife to cut crosses on the pork steaks so the marinade can really get in there. Massage the spice paste all over the meat and get into the air fryer basket for 6-8 minutes, depending on the thickness of your pork. Add the McCain Air Fryer Crinkle Chips into the second air fryer basket at the same time and cook for 8 minutes, shaking halfway through.

Step 3
While the pork and McCain Air Fryer Crinkle Chips are cooking, stir the garlic puree into the mayonnaise and chop the chives. Stir through the chives and season with salt and pepper and set aside for later.

Step 4
Slice up the iceberg lettuce, cucumber, tomatoes and red onion while everything cooks.

Step 5
Warm your flatbreads and lay them out. Spoon over the garlicky mayonnaise and some of your salad before slicing the pork steaks and placing on top.

Step 6
Top the pork slices with the crispy McCain Air Fryer Crinkle Chips and lay over some pickled red cabbage for crunch and acidity. Sprinkle over some feta and roll up your flatbreads. Serve up with the remaining salad and some extra McCain Air Fryer Crinkle Chips and garlic mayo to dip.
