McCain Sweet Potato, Roasted Sausages and Spinach, Watercress and Rocket Salad
Ingredients
- 400g McCain Sweet Potato with Rosemary & Garlic
- 8 good quality sausages
- 200g new potatoes
- 2 red onion peeled and cut into wedges
- Salad of rocket, watercress and spinach
- 3 tbsp of olive oil
- 4 sprigs of rosemary
- Salt and pepper to taste
- 2 tbsp of red onion relish [optional]
How to cook
Heat the oven to 200C/400F/Gas 6.
On a large baking tray spread the new potatoes and onions, drizzle with olive oil and season with salt and pepper. Top with sausages and put in the oven.
After 10 mins add McCain Sweet Potato and mix gently together, roast on the top shelf for 18 - 20 minutes.
Serve with red onion relish, spinach, rocket and watercress salad.
