Lamb Chops & McCain Sweet Potato

How to cook
Heat the oven to 240C/475F/Gas 9.
Spread the McCain Sweet Potato evenly in a single layer on a baking tray and cook on the top shelf for 18 - 20 minutes
In salted water, boil the new potatoes for approximately 20 minutes until tender
Season the lamb chops and grill for 5–7 minutes on each side until nicely browned but still a little pink in the centre. Transfer to a plate and set aside to rest for a few minutes
In salted water, boil the green beans for approximately two minutes, until softened but still firm
Place two chops on each plate with a serving of McCain Sweet Potato.
Pour over the shallot & red wine sauce and serve with new potatoes and green beans
